Santa's Speculaas Cookie Mix
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp fine sea salt
- 1 cup packed brown sugar
- 2 tsp Yes We Can! Nolet Speculaas Blend
- ¼ cup coarse sugar, for rolling
You add:
- 1 cup (2 sticks) unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1 Tbsp molasses
Directions
- Preheat oven to 350°F. Empty jar into a bowl. Add butter, egg, vanilla, and molasses. Mix until a soft dough forms.
- Roll into 1-inch balls, roll each in coarse sugar, space 2 inches apart on a parchment-lined sheet.
- Bake 10-12 min, until edges are set but centers still look soft.
- Cool on the sheet 5 min before moving to a rack. Makes about 24 cookies.
Hostess Tip: Built from Nolet — our Dutch spice blend named for John's side of the family. For a festive stretch, press the dough into a buttered 10" cast iron skillet instead of rolling — bake 22-25 min and slice like a pie.
