Cinnamon-Cardamom-Clove · White Pepper Edge — John's family heritage, in a cookie.
Nolet Speculaas Cookies
Ingredients
- 2¼ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 2 Tbsp Yes We Can! Nolet blend
- ¾ cup unsalted butter, softened
- ¾ cup packed dark brown sugar
- 1 large egg
- 1 tsp vanilla extract
- Sliced almonds, for pressing (traditional, optional)
Directions
- Whisk flour, baking powder, salt, and Nolet blend together in a bowl.
- Cream butter and brown sugar until light and fluffy, 2-3 minutes.
- Beat in egg and vanilla. Add dry ingredients, mixing until just combined.
- Chill dough at least 1 hour (or overnight — flavor deepens).
- Roll into 1-inch balls, press flat, top with a sliced almond if using.
- Bake at 350°F for 10-12 minutes until edges are just set. Cool on the pan 5 minutes before transferring.
Hostess Tip: This is the blend's origin story on a plate — dough freezes beautifully raw; bake straight from frozen, adding 2 extra minutes.
